to break up the monotony of link postings, i've decided to post a marinade recipe that i discovered over the weekend. we've used it twice now, on different meats, and the taste was different each time, but equally as delicious. the meats in question: steak and pork chops. the steaks i used were frozen when i began marinading them, but i don't think that's necessary at all.

method
place the steaks/meat in a pan or dish that's deep enough so they sit below the edge of the sides. the pan doesn't have to be super-huge or anything, but allow enough room so there's a little space between the meats and the edges of the pan.
rub the tony chachere's seasoning over the steaks, liberally enough to cover the steak, but not so much that all you see is seasoning. more stuff is going to be added, so don't go too crazy. rub the seasoning on one side completely and then flip the steak over to repeat on the other side.
use a heavy pinch of rosemary and rub that on both sides of the steak. repeat the same with the basil flakes.
the last dry ingredient is the garlic powder and this is mainly to your own taste. tony chachere's seasoning already has some garlic, but i wanted a little more, so i used a small pinch on both sides of the meat, rubbing it just as i did with the other seasonings.
finally, pour the balsamic vinegar around the steaks until you can't see the bottom of the pan any more. the liquid level doesn't need to be halfway up the steak, but there does need to be enough so it looks like it will flavor it. after you fill the bottom of the pan, carefully pour some vinegar over the tops of the steaks, but pour it slowly enough so the seasoning doesn't wash off. if you rubbed the steaks well enough, it shouldn't be easy to wash off. now just cover the pan and put it in the fridge.
halfway through the marinade (2 hours in because we were going to eat in a total of 4 hours), i flipped the steaks over so the other sides could bathe in the goodness. once we were ready to cook, i cooked the steaks as usual and they turned out great.
